Fig leaf negroni

Our Fig Leaf Negroni is a twist on the classic—gin is replaced with a liqueur we make using leaves gathered from a lone fig tree at Fern Verrow. Making your own liqueur takes time and care, but the results are rewarding. For ease, a good store-bought fig liqueur works beautifully too.

Ingredients

  • 30 ml Fig Leaf liqueur
  • 30 ml bitters (we use Berto)
  • 30 ml Sweet red Vermouth (we use Carpano Antica Formula)

Method

Pour all ingredients directly into a chilled old fashioned glass fill with ice, stir gently.

To make your own fig leaf liqueur, start by gently toasting the fig leaves for a couple of minutes in the oven, then infuse them into 60% ABV vodka and leave the infusion to rest in a cool, dark place for 48 to 72 hours. Once you’re happy with the strength of the infusion, filter the leaves with a cheese cloth and add sugar syrup so the liqueur is around 35% ABV (70 cl of 1:1 sugar syrup per 1 litre of vodka), and leave the final product to rest in a cool dark place for at least 1 week, stirring regularly.
