Front of House

Head Sommelier

Spring restaurant is looking for a Head Sommelier to lead a passionate wine team.

Working closely with the kitchen and front of house they will curate and develop the wine list to reflect our ever-changing, ingredient led menu. They will be a confident leader and organised manager who is capable of not only delivering exceptional service, but also taking responsibility for the training and development of the Sommelier team.

Key responsibilities

Manage the sommelier team (4-5 staff)

Full autonomy in writing and maintaining the wine list within the agreed Spring philosophy

Ensuring that agreed profit margins across beverage are achieved

Responsible for all aspects of wine and the ‘staff lifecycle’ from recruitment and training through to the processing of leavers whilst keeping staff turnover in line with Company standards

Daily wine training for all Front of House staff

The Person

Experience of running a department in a large restaurant

Track record of writing wine lists that are appropriate for both the venue and menu

Strong man-management and HR skills – previous experience essential

WSET Diploma or equivalent

Broad knowledge and experience of negotiating with wine suppliers

Head Waiter

We are looking for passionate Head Waiters to join our team. They maintain the spirit of Spring and create memorable experiences for our guests.   Previous experience in a restaurant of a similar size is essential with an ability to run a busy section.

Sommelier

We are looking for passionate Sommeliers to join our team, delivering warm, generous and informative service. Our sommeliers are committed to excellence and creating memorable experiences with fresh faced wine service. Our wine team are at the forefront of learning, tasting and training, working with our constantly evolving wine menu.

WSET or equivalent essential

Bartender

Spring is looking for passionate Bartenders to join our team. Working under direction from our Head Bartender to ensure a smooth service, they are committed to excellence and understand the importance of team work. We, in return, create a culture of ongoing training and learning within a friendly and professional work place.

Enthusiastic and motivated with a desire to learn and succeed

Ability to multi task and work under pressure in a busy environment

Back of House

Sous Chef

Spring is looking for a passionate and motivated Sous Chef to join our team, who will be jointly responsible for efficiently running the Spring Kitchens on an organisational level with a hands-on and meticulous approach.

The successful candidate will be proficient on all kitchen sections and will have strong leadership skills along with a desire to teach, motivate and inspire junior members of the team.

The Person

Strong food knowledge and proficient on all kitchen sections

Highly organised with good attention to detail

Good communication skills

Previous experience in a similar role in a similar kitchen

Be able to assist with the administrative/office responsibilities of the kitchen

Strong knowledge of the current health, safety and hygiene regulations with the ability to ensure these are maintained in the kitchens

 

Chef de Partie

We are now looking for an inquisitive, passionate and aspirational Chef de Partie to join the existing kitchen team at Spring. Our knowledgeable chefs understand the importance of team work and are committed to excellence. We, in return, create a culture of ongoing training and learning within a friendly and professional work place.
